Here is an easy recipe of fruit mousse that you can decline with other red fruits like raspberries, or even by mixing several fruits.

  • 320 ml of cream
  • 250 g strawberries
  • 75 g of sugar
  • 1 lemon

Remove the stalk from the strawberries and cut into pieces. Squeeze half of the lemon to collect 10 ml of juice (about 2 teaspoons).

Puree the strawberries. Add the sugar, then the lemon juice.

Beat the whipped cream until it is firm (it will rise better if you place the bowl with the cream in the refrigerator a good ten minutes before).

Pour the fruit coulis over the cream little by little and mix gently from bottom to top.

Pour into ramekins or glasses. Put in the refrigerator for 4 hours.
